Zesty Key Lime Pie

Introduction

Growing up, key lime pie was always referred to as my mom's favorite dessert ever. I was never a huge fan of it personally, but I'd never turn down a piece. Traditionally, it is usually enjoyed with a whipped cream concoction, however I've decided to omit that so that it is lighter on the ole health.

 

Ever since I made this pie, family and friends have been raving that I need to make more things and open a bakery, which I think is a little dramatic but I love the compliments! Since it seems to be a new fan favorite, I thought I'd share this for everyone to enjoy at home during the holiday season.

Before We Get Started

Key Limes: Always try to spring for fresh produce you can grab from the produce shelf at the store. If you're really feeling adventurous, see what your local farmers market might have! But if you're really in a pinch, use key lime juice.

  • Limes can be used however key limes are crucial for getting that tart, rather than acidic, taste you want in a key lime pie.

Light Sour Cream: Sour cream helps to provide a tangy flavor that beautifully compliments the tartness of the key limes. In addition, sour cream contributes to the overall texture of the dessert, ensuring a thick and velvety filling.

  • If sour cream if all you have available, note that your filling pay be more creamy in texture.

Sweetened Condensed Milk: This is a must-have ingredient for this simple dessert, as it adds a rich and creamy consistency while providing the sweetness that will offset the key limes. Because sweetened condensed milk is so sweet on its on, no sugar is needed for this recipe

 

Graham Cracker Pie Crust: Admittedly, I have yet to make a key lime pie with a homemade graham cracker crust so you can use a 9" from the grocery store if you're in a rush.

Homemade Whipped Topping (optional): Most traditional key lime pies come adorned with some level of whipped topping so be my guest and add some for decoration! If you're okay with simple, top it with some canned whipped cream.

3/4 Cup key lime juice | about 20 key limes

2 Tablespoons key lime zest | about 6 key limes

1/2 Cup light sour cream

2 14-oz. cans condensed milk

You will need a 9" pie dish, lightly greased if you are using a homemade graham cracker crust.

The pie will need time to cool first once out of the oven, before cooling in the refridgerator.

Consider adding a teaspoon of vanilla extract to add another layer to the flavor profile.

Don't forget to leave a key lime or two for decoration after the pie is finished cooling once out of the oven.

If you are using coconut milk as a substitution, ensure that you are using a full-fat version as this will contribute to the desired thick and creamy texture of key lime pie.

I like to let my key lime pies cool for at least 3 hours in the fridge before digging in, as I like a cold pie.

Baking Tips

  • Remove the pie immediately from the oven

  • Use a whisk when mixing ingredients

  • Zest your limes before cutting to juice

  • Not sweet enough? Try adding vanilla extra

Substitutions

  • Key limes = Limes

  • Light sour cream = Sour cream

  • Sour cream = Greek yogurt

  • Sweetened condensed milk = coconut milk (full-fat)

While the oven is preheating to 350ยฐF, add key lime zest and key lime juice in a medium sized bowl.

Using a whisk, combine the sweetened condensed milk with the zest and juice.

Once thoroughly beat, add the light sour cream and beat until well mixed.

Carefully, pour the mixture into a 9" graham cracker crust, do not overfill. Place onto the center-mid rack in the oven and cook for 10 minutes.

Once done cooking, let cool on the counter for 10-15 minutes.

Add decorations, if desired. When the pie is cool enough to handle with bare hands, gently place the pie into the fridge and cool for at least 1 hour.

Serve and enjoy!

Chic Crochet Cardigan

One of my toxic traits is wanting to make things for the people I love that they didn't even ask for and then take forever to actually finish the product. But at last, this time I was successful in completing this adorable, cozy cardigan for a friend of mine for Christmas. When I took the time to sit down and get a crochet hook in my hand, the pattern worked up surprisingly quick, in just under 13 hours. I'm excited to share the blog about how I picked the colors and what pattern I used, in addition to pictures of my friend in this cardigan as she poses as my model. 

 

This adorable patchwork-style cardigan will be customizable in terms of color palette, size, and the buttons (as decoration only); you'll be able to make it uniquely yours!
